Chicken & Rice

Okay, so I am linking up with Andrea over at momfessionals for the recipe club. I am sharing a recipe that my grandmother used to make and passed on to our family. It has been a family favorite for many, many years. This recipe is simple, easy, quick and very delicious--a PERFECT meal for a busy, cold night!!! I had planned on making this for dinner last night, so that I would have a picture, but that did not happen. I apologize for no picture.

Ingredients 
 A rotisserie chicken (pull all the chicken off)
4 cups of chicken broth
1 tsp of veggie or olive oil
2 bell peppers, cut into bite size pieces
1 small box of Minute rice (2 cups uncooked)
1 white onion, chopped
1/2 cup low sodium soy sauce
2 tbs flour

Directions
Pull your chicken off the bone and set aside in a bowl. Cook rice according to the directions on the box.  Saute onions & bell peppers in oil. When done, sprinkle in flour and mix. Pour broth back in and cook until it thickens. Add cooked rice, soy sauce and chicken. Heat on med-high about 20 minutes and enjoy. 

This meal has been in our family for as long as I can remember. It's the perfect meal for cold nights, when you're sick or just because! It is delicious and you will thank me for it!

Baked Rice


Looking for a delicious, warm side to go with your dinner? I have one I am going to share with you today, Baked Rice. This has been a staple in our family since I was too young to remember. What I do remember is I have loved this since I was about four and still love it. I bring this item to potlucks and we make it quite frequently in our house. It is a big hit with my kids and everyone always asks me for the recipe. Okay, here you go.  Try it. You will thank me for it! 
Your family will love it! 

Ingredients
¼ cup of butter
1 cup of Uncle Ben’s Converted Rice
1 can of Campbell’s French Onion Soup
2/3 of the soup can of water
salt & pepper

Melt butter in a casserole dish.
Add your soup, water, rice, salt & pepper. Stir and cover.
Bake @ 350 for 1 hour.


right before you put it in the oven. 



The final product. It's simply delicious.

My Favorite Things At Target

Today is an ICE DAY here in Fort Worth, Texas! Not that it's much different from our normal day because my kiddos are 4 and 2, so they don't have school. However, my husband is home from work and we are FORCED to stay in our pjs all day long! We are going to cuddle up by the fire, snuggle, stay warm and have a fun family day inside.

Yep, this pretty much sums it up! Every time I go into Target, I leave spending WAY more than I should have. I mean, who doesn't love Target? 



ONE

The Dollar Bins-- Every time I go in, I make a pass through here. I have found all kinds of cute bins, cute kiddie socks, crafts for the kids, stickers (my kids LOVE), note pads, all kinds of cute stuff for CHEAP. 

TWO

I LOVE the kids clothes department!! Super cute stuff, for a really good price. I usually make a sweep through here and leave with a few outfits for each kid. 

THREE

The Essie nail polish. Any time I am looking for a cute, new color I go straight to Essie at Target. My daughter LOVES going and picking out a new color. 

FOUR

I LOVE, LOVE, LOVE the gift bags and wrapping paper selection. I always see so many cute ones and grab them for later. 

FIVE
Target has a great selection of chairs for bedroom, office or any room really. I have found quite a few different chairs I love at Target.

Kinsley's 2nd Birthday! Gymboree Style

Well, I really wish I would have had a blog up and going years ago, but since I didn't... I am catching up now.

For Kinsley's 2nd birthday, it was held at Gymboree. I thought it was only fitting because she has been going and in love with it since she was about 4 months old. It was a lot of fun and I am so glad we had it there. I think she had a blast and so did all the other kids.

I think she had a great time! Everything was perfect... the cake, the guests, the whole party was exactly what I wanted her to have. I think she had a great day!! Happy Birthday Kinsley Jade, we love you to the moon and back again!!!
